Egg Muffins

Ingredients (Makes 6 portions)
12 eggs
200g Feta Cheese (Cut into small cubes)
1/2 bunch spring onions (Sliced)
200g Cherry Tomatoes (Quartered)
Method
Preheat the oven to 180 degrees fan.
Take a 12 muffin silicone muffin tray. If you don’t have silicone you can use a normal tray but be sure to oil or butter well.
Divide the Feta, Spring Onions and Cherry Tomatoes equally between each mould.
Crack all the eggs into a jug and whisk until mixed well. Season with a little salt and pepper.
Divide the egg mixture evenly into the 12 muffin holes and give each a stir to mix well.
Put into the oven for 25mins or until cooked through.
Allow to cool slightly and release from the mould with a knife.
Allow 2 per serving and store in the fridge for up to 3 days.
